Tahini (Sesame Paste) is made from sesame seeds that are soaked in water and then crushed to separate the bran from the kernels. The crushed seeds are soaked in salt water, causing the bran to sink. The floating kernels are skimmed off the surface, toasted, and ground to produce an oily paste.
Tahini is an excellent source of copper, manganese and the amino acid methionine. Tahini is a source of the healthy fatty acids omega*3 and omega*6. Tahini made from raw sesame seeds is lower in fat than tahini made from roasted seeds. It is used in salad dressings, hummus, sauces, chilled salads, an ideal ingredient for desserts, is a great source of calcium.

Because of tahinis high oil content, many manufacturers recommend refrigeration to prevent spoilage. This is particularly true among makers of raw, organic tahini, who will often prepare their tahini at low temperatures and ship and store it in refrigerated cases to maximize quality and shelf life.

Each step in our chemical-free tahini processing method is designed in a way that minimizes the amount of heat and friction underwent by the sesame seeds.

The seeds are peeled, roasted by steam instead of direct fire, and cooled slowly, under strict quality control standards.
Using a gentle salt-water bath rather than machine arms to separate husk from seed is just one example of the innovative factory design that preserves the aroma and sweetness of the seed, making for an unmistakably traditional, homemade taste.
Tests are made in our lab for sesame tahini products: Weight, humidity, salt percentage, viscosity of raw tahini, viscosity of prepared tahini %*0 added water, organoleptic tests, periodical surfaces inspection.
